Swordfish with Asparagus & Roasted Potatoes

Ingredients

Sword fish
Red potatoes
Asparagus
Garlic
EVOO
Red pepper flakes
Sea salt
Lemon
Oregano
Entire bulb of garlic

Instructions

Pre-heat oven to 400 degrees. The cooking of all three dishes varies slightly so you really need to keep an eye on things. Potatoes take the longest about 45 min; Asparagus about 20-25 min; Fish about 15-20 min.

General rule while cooking - nothing is written in stone. Always look at it, taste it and adjust accordingly. 

Fish prep

On each piece- squeeze half a lemon
Add ground sea salt & ground pepper, oregano
Then place on lightly oiled baking sheet

Asparagus prep

Wash and snip-off ends
Sprinkle EVOO onto baking sheet
Lay flat and spread out on baking sheet
Add ground sea salt, chopped garlic and sprinkle with EVOO

Potato prep

Wash & cut into little pieces
Put in large mixing bowl - add ground sea salt, red pepper flakes, chopped up garlic and a generous amount of EVOO
Mix it all together then lay on baking sheet

Chef’s Notes

A bottle of white or Pinot goes nice with this dish.
