The Sandwich!
Quite possibly one of the greatest meal creations, (thank you John Montagu, the 4th Earl of Sandwich).
I love sandwiches and I love trying new ways to make them delicious without using “deli meats”. No surprise my favorite sandwich is the Caprese - Mozzarella, tomato and fresh basil, but the list is endless:
Pepper jack cheese, arugula and mustard on toasted Semolina bread.
Hummus, Avocado, tomato, red onion, beansprouts, olive oil S&P on health bread
Grilled Halloumi, Avocado, bean sprouts, tomato, Hummus, red onion on 7 grain bread…
This week I’m sharing a simple Tuna salad sandwich. Italian style Genova Premium is my go-to if I don’t buy it pre-made from Union Market (the best pre-made I’ve had - they don’t drown it in mayo). Genova is a company that cares about the sustainability of the seas and the humane treatment of their workers.
Since I’m not a mayonnaise fan - in fact even seeing mayonnaise in the fridge makes me cringe - when I make it at home, I do it Italian style - salt, pepper and olive oil.
I like to add Bib or Romain lettuce, sliced tomato, red onion, S&P. Pickles and potato chips either inside or on the side!
If you’re avoiding carbs, try using lettuce in lieu of bread!
